Bircher muesli

This is a staple every morning for breakfast, made with oats, it is a filling and healthy way to start the day – oats are notoriously good for reducing cholesterol and should be gluten free. We make this breakfast favourite with plain soya yogurt so that it is dairy free too.

You can use any fresh fruit but the blueberry holds its shape and consistency really well even if you refrigerate some for the next day. They are particularly rich in anti oxidants – especially the home grown ones! Hoping they will halt the aging brain!

I have used cup measurements which make it so easy to put together in the morning! Use any teacup and you will end up with the correct proportions of ingredients.

Bircher muesli

Serves 6

  • 2 cups of porridge oats
  • 1 cup of apple juice
  • 1 cup plain soya yogurt
  • 1 cup of blueberries

Mix the oats with the apple juice and slowly mix in the yoghurt and blueberries. Leave for a few minutes before serving. This will make several portions and will keep in the fridge really well for a few days.

If the mixture becomes a little stiff just lighten with a little apple juice.
