Compote of dried fruit

Every morning at The Old Rectory we offer a compote of dried fruits for the guests to enjoy with a large dollop of natural yogurt or muesli. This mixture is infused with cinnamon and citrus zest and will keep for a couple of days in the fridge.

Compote of dried fruit

Serves 6

  • 200g dried apricots
  • 200g dried prunes
  • 150ml orange juice
  • 750ml water
  • 75g raisins
  • 1 cinnamon stick
  • grated zest of half a lemon and orange

Put the apricots, prunes, orange juice , cinnamon, zest and water in a metal bowl or pan and leave to soak overnight, preferably somewhere warm (I put it at the back of the aga).

In the morning add the raisins and it should be ready to serve. Decorate with more zest if you like.
