Danish tomato salad

I had been looking forward for such a long time to visit Copenhagen and The Louisiana Modern Art Museum never doubting to be amazed by it’s art collection and  it’s stunning coastal location – what I didn’t expect was to be so wowed by the fabulous food in the museum’s cafe which overhangs the beach and the crashing waves of the North Sea. Lunch here is a real treat – a Danish buffet of delicious fresh salads bursting with Scandinavian flavours, unforgettable rye bread covered in toasted seeds and pastries, yes true Danish pastries! Returning home, I have tried to recreate their wonderful tomato salad, simple, with only three ingredients yet so delicious.

Use the best and most flavoured baby tomatoes that you can find.

Yes – this has to be one of my favourite museums ever – just stunning.

Danish tomato salad

Serves 6

  • 400g baby cherry or plum tomatoes
  • 1/2 cucumber -skin on
  • 2 tbs chopped fresh dill
  • pinch of salt and pepper

Dice the tomato and cucumber into small cubes – approx 1/2 cm – if you have the patience!

Combine together with dill and season.
