Thyme and maple syrup dressing

A really good salad dressing can transform simple salad ingredients into a really delicious meal – this dressing is sweetened with maple syrup, infused with fresh thyme and so also wildly aromatic; wonderful on fresh leaves, drizzled over tomatoes or any oven roasted vegetables.

Always make plenty of a dressing so that you can store some away in the fridge, I find these plastic bottles really useful for storage, most dressings will keep really well for a couple of weeks – don’t forget to label the bottles!

Whilst we are talking thyme do try this stunning thyme liqueur produced by Bigallet in the French Alps in South-Eastern France, created from the slow maceration and distillation of thyme sprigs. Add a small measure to a glass of prosecco for a delicious aromatic drink, a taste of summer in Provence!

Thyme and maple syrup dressing

Serves 10

  • 150ml maple syrup
  • 6 tbs olive oil
  • 6 tbs sherry vinegar
  • 3 crushed garlic cloves
  • 2 sprigs fresh thyme
  • salt and pepper to taste

Combine all the dressing ingredients together, shake well and adjust seasoning.
