End of term Oreo brownies

This recipe makes a great tray of 24 brownies, ready for sharing with the whole class, they are really rich and decadent so you could even cut smaller if your children will allow! Halve the recipe for home consumption!

The Oreo cookies is a great favourite in our house, an American import to the UK and now in most supermarkets, what a treat to bite into the brownie and discover melted dark cookie mixture and that delicious white cream filling.

End of term Oreo brownies

Serves 24

400g dark chocolate roughly chopped
350g unsalted butter
650g caster sugar
260g plain flour
6 eggs, gently beaten
2 packets Oreo cookies

Oven 170 o/c Grease and line a tin with silicon paper 37x27cm approx.
Melt the chocolate and butter in a heatproof bowl over gently boiling water, not letting bottom of bowl touch the water. Leave till melted and smooth.
Remove from heat and add sugar – stir well.
Add flour and stir in before stirring in eggs until thick and smooth.
Spoon half the mixture into the prepared tin.
Cover with a layer of Oreo cookies and then spoon over rest of mixture.
Cook for 30 minutes – top should be hard and crunchy but soft in centre. Do not over cook.
Allow to cool completely before dusting with icing sugar and cutting up.
