400g dark chocolate roughly chopped
350g unsalted butter
650g caster sugar
260g plain flour
6 eggs, gently beaten
2 packets Oreo cookies
Oven 170 o/c Grease and line a tin with silicon paper 37x27cm approx.
Melt the chocolate and butter in a heatproof bowl over gently boiling water, not letting bottom of bowl touch the water. Leave till melted and smooth.
Remove from heat and add sugar – stir well.
Add flour and stir in before stirring in eggs until thick and smooth.
Spoon half the mixture into the prepared tin.
Cover with a layer of Oreo cookies and then spoon over rest of mixture.
Cook for 30 minutes – top should be hard and crunchy but soft in centre. Do not over cook.
Allow to cool completely before dusting with icing sugar and cutting up.
