Juice and zest of two oranges
125g whole blanched almonds
125g jumbo oats
125g porridge oats
125g dried apricots chopped
125g dried cranberries
200g mixed seeds – pumpkin,sesame,sunflower,linseed, chai
125g coconut chips
Heat the oven to 150 0c , gas mark 2.
Melt the butter and honey together over a low heat and then add the orange juice and zest. Add the vanilla seeds from inside the pod to the mixture.
Add the oats and almonds, stir and spread out on a baking tray.
Bake for 35 mins until golden brown. Once cooled break up into small clumps.
Combine with the fruit, seeds and coconut chips.
Store in large glass kilner jars – it keeps really well. This will make over a kilogram.
