Granola

Having just experienced the really special treat of a night’s stay at Babington House in Somerset I couldn’t wait to have a go at replicating their delicious granola, this recipe is an adaption of the Babington Granola, colourful and delicious.

It is an arm and a leg to stay but wow it’s really worth it: we lazed in double deck chair beds on the lawn, swam in the pool, had wonderful treatments in the famous Cowshed Spa – overlooking the immense walled garden, drank cocktails, dined and then slept in a seven foot square bed! It was not at all easy to leave – we will save up to go back!

Granola

Serves 5

75g butter

125ml honey

Juice and zest of two oranges

vanilla pod

125g whole blanched almonds

125g jumbo oats

125g porridge oats

125g dried apricots chopped

125g dried cranberries

125g raisins

200g mixed seeds – pumpkin,sesame,sunflower,linseed, chai

125g coconut chips

Heat the oven to 150 0c , gas mark 2.

Melt the butter and honey together over a low heat and then add the orange juice and zest. Add the vanilla seeds from inside the pod to the mixture.

Add the oats and almonds, stir and spread out on a baking tray.

Bake for 35 mins until golden brown. Once cooled break up into small clumps.

Combine with the fruit, seeds and coconut chips.

Store in large glass kilner jars – it keeps really well. This will make over a kilogram.
