Pears and blackberries poached in sloe gin

There is so much exciting produce around in the Autumn, ingredients that we haven’t used over the summer months, so it’s just such an exciting time to cook and combine together these tasty fruits. This seems to have been the year for pears and blackberries, the hedgerows and trees have been truly ladened. I have poached them together in some of our sloe gin from last year.The result is this rich, claret coloured, compote that is delicious with yogurt or ice cream or pop on the top a crumble topping for a real treat.

Pears and blackberries poached in sloe gin

Serves 6

6 pears
200g blackberries
100g demarara sugar
200ml sloe gin

Peel and core the pears – slice in six pieces.

Place the pears in an oven proof dish with the sloe gin and sugar.

Bake at 180 oc for 10 minutes. Add the blackberries and cook for a further 5 minutes until the pears are almost soft

Remove from the oven – drain off the liquid into a small pan and bring to the boil for a few minutes until reduced by half and thickened. Pour back over the pears and blackberries.
