100g demarara sugar
200ml sloe gin
Peel and core the pears – slice in six pieces.
Place the pears in an oven proof dish with the sloe gin and sugar.
Bake at 180 oc for 10 minutes. Add the blackberries and cook for a further 5 minutes until the pears are almost soft
Remove from the oven – drain off the liquid into a small pan and bring to the boil for a few minutes until reduced by half and thickened. Pour back over the pears and blackberries.
