Spinach and basil hummus

Hummus can be made with practically any vegetable or bean, its such a great way to get everyone to eat more raw vegetables, a delicious start to a dinner with a glass of wine or prosecco. This is a great green colour and oozing with goodness- plenty of vitamins and iron, just got to be better than a bowl of crisps!

Spinach and basil hummus

Serves 6

  • 1 tin of chickpeas – drained
  • Juice of 2 lemons
  • 2 tbsp of tahini
  • 4 tbsp of olive oil
  • 1 clove of garlic
  • 10 basil leaves
  • A handful of spinach leaves

Blitz the first five ingredients in a food processor and then add the basil and spinach. If the hummus is too thick add a little water.

Serve with your favourite raw vegetables. I use radishes and carrots from the garden
