one finely chopped onion
crushed garlic clove
tin of chopped tomatoes
2 sticks of celery diced
salt and pepper
4 courgettes spiralized
finely grated zest of lemon
Fry the onion and garlic in a little olive oil until soft.
Add the celery and tomato and cook for 10 minutes – season with salt and pepper.
Bring a pan of water to boil – add the spiralized courgettes and cook for 1 minute. Drain and sprinkle with the lemon zest.
Add the courgettes to bowls and top with the tomato sauce. Add parmesan cheese if you wish.
