Strawberry and balsamic vinegar ice cream

Thank you to Anna del Conte for this amazing recipe, I promise you will never taste ice cream with such an intense strawberry flavour thanks to the addition of the balsamic vinegar. My daughter took these amazing close ups of strawberries growing in the garden this summer – they weren’t around for long!

Strawberry and balsamic vinegar ice cream

Serves 6

  • 450g fresh strawberries, washed and hulled
  • 150g caster sugar
  • 1 tbsp balsamic vinegar
  • 150ml whipping cream

Blitz the strawberries and caster sugar in the food processor, add the balsamic vinegar and then pour into a bowl and refrigerate  for an hour so the flavours infuse.

Fold in the cream and add to the ice cream maker.

Freeze when made. Allow to soften by removing from the freezer 5/10 minutes before serving.
