Tomato Lentil Soup

This is a nourishing bowl of goodness made with warming spices, tomatoes and lentils, which are a great food; slow burning, increasing energy levels, reducing cholestrol whilst replenishing your iron store. The ginger and turmeric, as well as being warming, they have great anti inflammatory properties, good to help arthritic joints and winter stiffness!

Turmeric, I have to admit, I am throwing into most soups and lots of dishes  – it is a powerful antioxidant – great in the battle against cancer!

Tomato Lentil Soup

Serves 4

 

  • 1 cup red lentils, rinsed very well
  • 1 large onion, chopped
  • 2 leeks chopped
  • 3 cloves garlic, crushed
  • 1 tbsp. minced ginger root
  • 1 tbsp turmeric
  • 1 tbsp. ground cumin
  • ¼ tsp. cayenne pepper
  • 1 15 oz. can of tomatoes; or 4 large, fresh tomatoes, chopped
  • 4 cups stock
  • salt to taste
  • 1  organic lemon
  • coriander/parsley to garnish

 

 

  •  Rinse the lentils very well until the water runs clear.
  •  Heat oil in a medium pot and sauté onions, leeks, garlic and ginger for 5 minutes until soft.
  • Add a pinch of salt.
  •  Add spices and stir for another minute or so, until fragrant.
  •  Add tomatoes, 3 slices of lemon and rinsed lentils, then add vegetable stock.
  • Stir well Cover and bring to a boil. Reduce heat to simmer for about 30 minutes, or until the lentils are soft.
  • Squeeze in the rest of the lemon juice.
  • Adjust the consistency if you need to – add more stock if it is too thick.
  • Serve hot with some coriander, green onions or parsley on top with a slice of lemon.
